Great salmon for Christmas dinners and other special occasions but too early to be completed on weekdays. Plus, you can prepare everything up to the sauce in advance!

Ingredients Of Baked Parmesan Crusted Salmon

  • Prepare 4 (6- 7 oz each) skinless salmon fillets
  • Prepare 3/4 cup panko bread crumbs
  • You need 3/4 cup finely shredded parmesan
  • You need 2 1/2 Tbsp chopped fresh parsley
  • It’s 3/4 tsp garlic powder
  • You need Salt and freshly ground black pepper, to taste
  • It’s 1 Tbsp olive oil
  • It’s 1 large egg
  • It’s 4 lemon slices

Step by Step How to Make Baked Parmesan Crusted Salmon

  1. Preheat oven to 425 degrees. Spray non-stick cooking spray on an oven-safe wire cooling rack and place on an 18 x 13 inch rimmed top.
  2. Mix in a shallow plate with panco, parmesan cheese, parsley, garlic powder, salt and pepper (I use 3/4 teaspoon salt and 1/2 teaspoon pepper). Sprinkle with olive oil and stir well so that the mixture is evenly coated.
  3. In another shallow dish, beat the eggs until the yolk and egg whites are well mixed.
  4. Working with one piece of salmon at a time dredge each side in egg, then transfer to panko mixture and coat and press both sides of salmon in panko mixture (also sprinkle panko mixture over top and press to help stick).
  5. Move to the wire rack prepared on the top plate. Repeat the process with the remaining three parts (sprinkle the fish fillets with additional breadcrumbs, then repeat evenly and slowly until they are evenly browned).
  6. Bake the salmon in a preheated oven for about 10 to 15 minutes until the salmon is almost unprocessed (the baking time depends on the thickness of the salmon).
  7. Serve with lemon slices for spritzing over.
